Spiralised zucchini with grilled cauliflower steak

A different kind of #plantbased ‘steak’ with its own accompaniment – oodles of zoodels. Enjoy!

Ingredients:

  • 3-4 spiralized zucchini
  • Raw pesto sauce (in a Vitamix blend a handful of basil, rocket, parsley, a pinch of garlic powder, Celtic sea salt, a small handful of walnuts or pine nuts and nutritional yeast (optional). Add a bit of water)
  • One head of cauliflower broken into florets
  • Nutritional yeast

Instructions:
Spiralise your zucchini or if you don’t have a spiraliser, simply use a potato peeler. Top with the raw pesto sauce you’ve made in a blender/food processor. You can grill the cauliflower and cover with nutritional yeast. Add this to your spiralised zucchini and serve.
