Lentil burgers in sourdough buckwheat buns

Ingredients:

Sourdough buckwheat buns:

  • 120g raw buckwheat
  • 160g water
  • Pinch of caraway seeds
  • Pinch of nigella seeds
  • 1 tsp seaweed flakes

Lentil patties:

  • 150g mushrooms
  • 130g onion
  • 100g sweet potato
  • 2 tsp tamari
  • 170g cooked brown lentils (100g before cooking)
  • 2 garlic cloves (crushed)
  • 40g tomato paste
  • 20g lemon juice
  • 1/3 cup chopped coriander
  • ½ tsp coriander powder
  • ½ tsp smoked sweet paprika
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • Pinch of dried sage

For serving burgers:

  • Lettuce
  • Tomato sauce (see the pizza recipe)
  • Mustard
  • Cucumber
  • tomato
  • avocado
  • Pickles
  • Alfalfa and radish sprouts

Method:

To make the buns, mix buckwheat with water and let it soak. Cover the bowl with a tea towel and leave in room temperature (about 20 C) for 36 hours. If the temperature is higher than 23 C, reduce the soaking time to 24 hours. Then blend the buckwheat with the same water it was soaking in. Add caraway seeds, nigella seeds and seaweed flakes.

The dough should be runny, so to bake the buns you need metal rings or silicone round moulds. I use 8cm diameter metal rings. Place the rings on the non-stick baking sheet and pour a portion of the dough about 1,5 cm thick, into each ring. Sprinkle the top with coriander and caraway seeds. Preheat the oven to 160 C degrees (320F) and bake the buns for about 30 minutes.

To make the lentil patties, cook brown lentils until soft, but not overcooked. Cut sweet potatoes in small cubes and cook for a short time. Cook the mushrooms with onion and tamari, until onion is soft. Add some water if needed. Put all the ingredients in a food processor bowl and process until well combined. Shape four burgers and fry them on a dry non-stick frying pan. You can also bake them in the oven. Use the buns fresh from the oven or warm them for 5-10 minutes before serving.

To make burgers, cut the buns and spread some mustard on the base of each bun. Put lettuce leaf on the base, spoon some tomato sauce, add the lentil patties, cucumber slices, tomato slices, avocado, sprouts and pickles. Place the top bun half on the top. Spear the burgers with wooden skewers to keep them from toppling over.
