Ingredients:
- 300g young coconut meat
- 300g dates
- 450g ripe bananas
- 2 tsp vanilla extract
- 120g orange juice
- 2 tsp cinnamon powder
- 1/2 tsp bicarbonate of soda
- 180g banana flour
- 50g raisins
In a food processor blend coconut meat with dates and orange juice until smooth. Peel the bananas, place them in a mixing bowl and mash with a fork. Transfer coconut meat blended with orange juice and dates to the mixing bowl and add raisins (before use, you can soak them in hot water for 20 minutes). Add the rest of the ingredients and mix with a spoon until ingredients are combined.
Transfer into a silicone loaf baking tray and decorate the top with banana slices. Bake at 175°C for 50 minutes.
