FRUITY COOKIES RECIPE
- 110g medjool dates
- 100g ripe banana
- ¼ tsp cinnamon
- 50g dried organic apricots
- 25g dried prunes
- 25g dried unsweetened cranberries
- 1/8 tsp bicarbonate of soda
- 70g wholemeal spelt flour
- 15g uncooked quinoa
- 1 Tbsp baobab powder
- Zest of 1 organic unwaxed lemon
- 1 Tbsp lemon juice
Blend the banana with 60g of medjool dates until this forms a paste.
Chop the rest of the medjool dates, as well as the other dried fruits (prunes, apricots).
Using a fine grater (microplane), zest a peel of one organic lemon.
Mix all ingredients in a large bowl.
Divide mixture into six parts, shape the cookies (moisten your hands with cold water to keep the cookie dough from sticking to your hands).
Preheat the oven to 175 C degrees (350F). Place the cookies on the baking sheet, and bake for 15 minutes.
This recipe makes six cookies
