Ingredients for the pancakes:

  • 200g raw buckwheat
  • 250g water
  • 50g orange juice
  • 100g ripe banana
  • 1 medjool date
  • ¼ tsp cinnamon
  • ¼ tsp bicarbonate of soda

Ingredients for orange caramel sauce:

  • 50g dates
  • 70g orange juice
  • ½ tsp lucuma powder
Buckwheat and banana pancakes


Soak buckwheat in water for 5-6 hours. After this time, blend soaked buckwheat with the rest of the ingredients until smooth. Fry pancakes on hot non-stick pan (without oil) for about 1-2 minutes, flip and fry for another minute or until golden brown. Pancakes taste the best if you cover them for 15-20 minutes and leave in a warm place after frying.

For an orange caramel sauce, blend ingredients until smooth and creamy. Serve pancakes with caramel and fresh berries.
