Ingredients:

For a hemp seeds cheese:

  • 100g hulled hemp seeds
  • 100g soaked sunflower seeds
  • 50g lemon juice
  • 50g grated radish
  • 30g grated cucumber
  • 2 spring onions
  • 5 leaves of wild garlic or 1 clove of garlic
  • Handful of dill springs
  • few coriander springs
  • few leaves of fresh rosemary
  • few leaves of fresh basil
  • 1 spring of fresh thyme
  • Salt and pepper  to taste (optional)

For the rolls:

  • 2 sheets of nori
  • 1 cucumber
  • ½  red pepper
  • 10g alfalfa sprouts
  • 5g cress sprouts
Nori and cucumber rolls with hemp seed cheese

Method:

For the cheese blend hemp seeds into butter. Add sunflower soaked for five hours add lemon juice and blend until creamy. Transfer to a mixing bowl, add finely chopped herbs, grated cucumber, radish and mix well. Let it set in a fridge for a while.

Slice cucumber lengthwise using mandolin or vegetable peeler. Cut nori rolls in a 4cm wide stripes (or the size to match the width of cucumber slices). Place cucumber slices on the nori stripes.
