Ingredients for a mango wrap:

400g ripe mango

For the filling:

  • 2 tsp psyllium husk powder
  • 1 apple
  • 2 firm peaches
  • 2 firm nectarines
  • Handful of blueberries
  • Or other fruits of your choice


To make the mango wraps: blend mango with psyllium husk powder in a high-speed blender until smooth. Prepare four dehydrator trays with non-stick sheets. Pour the mixture in the middle of each dehydrator sheet.  Use a palette knife or offset spatula to spread the mixture evenly into four large circles. Dehydrate for 6-8 hours or until fully dry but still flexible. Using scissors cut each circle into four quarters. Bend each quarter circle and overlap the straight edges until they form a cone shape. Moisten the edges and stick them together.

Cut apple, peaches and nectarines in thin strips. Fill the cones with the fruit strips and berries. Serve immediately, until the wraps get soggy.  Makes a perfect raw snack for a meeting or party.
