A super simple salad to make that will meet many of your nutritional needs. Beets are a great source of nutrients, including fibre, folate and vitamin C.
Ingredients:
- Beetroot (boiled/grilled)
- Apples (green – raw)
- Lime juice
- Microgreens/sprouts
- Spring onion
- Walnuts
- Virgin olive oil
- Salt
- Butter lettuce/rocket (optional)
Instructions:
Grate a green apple and sprinkle with lime juice. Top with boiled or grilled beets, microgreens or sprouts, spring onion and a few walnuts. Drizzle with more lime juice and a little bit of virgin olive oil and salt.
Top tip:
You could always add more greens such as rocket and butter lettuce to increase the green content.
