MUSHROOM AND SEAWEED BROTH

Mushroom and seaweed broth

INGREDIENTS:

  • 350g mixed mushrooms (oysters, king oysters, portobello, shitake)
  • 1 small carrot
  • handful of dried seweed (mixed dulse, nori, wakame)
  • 150g mung bean sprouts
  • 1 small broccoli
  • 2 Tbsp lime juice
  • 3 Tbsp tamari or liquid aminos
  • ¼ tsp dried rosemary
  • 2 kafir lime leaves
  • 2 bay leaves
  • 1 garlic clove
  • 1 tsp nutritional yeast
  • 2 tsp UMAMI mushroom seasoning
  • pinch of black pepper
  • 1 litre of water

Serve with rice noodles, mung bean noodles or spiralized courgette noodles.

Chop mushrooms and carrots in thin slices. Cook all ingredients (except broccoli) for 20-25 minutes. Add thinly sliced broccoli 5 minutes before the finish. Serve with noodles or spiralized courgette.
