Asparagus and Mung Bean Salad

Tahini Dressing Ingredients:

  • 1/2 cup of raw sesame seeds
  • Juice of half a lemon
  • A pinch of garlic powder,
  • 1 date
  • Salt to taste
  • 3/4 cup of water

Mix it all up in the vitamix and it’s ready to use as a dressing

Salad Ingredients:

  • Lightly Steamed asparagus with a little salt to taste or no salt
  • Mung bean noodles
  • Seaweed
  • Toasted sesame seeds

Simply boil the mung bean noodles with some seaweed. Set aside and drain. Add a bit of toasted sesame seed oil and Braggs Amino Acids for flavour, or sea salt. Arrange in a bowl as per photo. Serve.

Top Tip:
This recipe is great for cooler days, served with a side of raw salad and the light tahini dressing.
