Ingredients:
For the noodles:
- 1 zucchini
- 1 large carrot
- 2 broccoli stalks
- 1 Tbsp chopped coriander
- 1 spring onion (scallion)
- 1 tsp sesame seeds to sprinkle
For the Satay sauce:
- 1 small zucchini
- 3 Tbsp almond butter
- ½ small onion
- 1 tsp onion powder
- 1 Tbsp liquid aminos
- 4 Tbsp lime juice
- 1 garlic clove
- 1 tsp freshly grated ginger
- ½ tsp sesame oil
- 1 Tbsp hemp seeds
- 2 drops lemon grass essential oil
- ½ tsp chilli paste
- 4 halves sundried tomatoes
To make the noodles spiralize zucchini and carrot or shred them using julienne peeler. Peel broccoli stalks and shred them using julienne peeler. Mix the noodles with chopped coriander and green onions.
To make Satay sauce blend all ingredients in a high-speed blender.
Mix the noodles with dressing, sprinkle with sesame seeds.
