Ingredients (serves two):

  • 400g watermelon
  • 300g ripe tomatoes
  • 200g peeled cucumber
  • 1 Tbsp apple cider vinegar
  • 3 Tbsp lime juice
  • 1 Tbsp coconut aminos
  • Few drops Tabasco sauce
  • ½ tsp freshly ground coriander powder
  • 50g avocado (optional)
  • 1 garlic clove
  • ½ small onion
  • ½ tsp onion powder
  • 1 Tbsp tomato paste

For garnish:

Cucumber, bell pepper, spring onion

Blend all the gazpacho ingredients until smooth. Chill in the fridge for few hours before serving. Chop cucumber and bell peppers into small cubes and garnish gazpacho before serving.
