Butternut noodles on a bed of sprouts with a delectable Mango curry sauce. This recipe will wow your family.
Ingredients:
½ or x1 whole butternut (the latter will make a lot!)
Dressing:
- x1 mango
- x2 tomatoes
- Small handful of sun-dried tomatoes
- Juice of 1/2 lime
- A little sea salt or Brags Amino Acids
- 1/2 tsp of organic curry powder
- Blend in Vitamix
Directions:
Spiralise the butternut into noodles. Place on a bed of sprouts. Top with the mango/curry dressing and over the top you can add banana chips and raisins. A taste sensation awaits!
