This simple spelt pasta recipe really helped me during the transition days when I was craving something with a little more density.
Ingredients (Serves 1):
- Einkorn or spelt pasta (2 cups)
- Fresh tomatoes (1-1.5 cups)
- Handful of basil
- Vegan ricotta (store-bought)
Tips: Combine this meal (ideally precede with) a large raw salad. This helps with transitioning time and makes for a great beginner LMF meal!
Cook the einkorn or spelt pasta until al dente consistency is reached. Cut the salad tomatoes into quarters. Chop basil finely. Break ricotta up into bite-sized pieces. Add pasta to a bowl and top with other ingredients.
You could always add more greens such as rocket for a bit of a bite.
