- Rocket (as much as you can comfortably manage)
- x2-3 Carrots (grated)
- x1 large Beetroot (grated)
- Handful of sprouts (more is better)
- x2-3 salad tomatoes (quartered)
- Spring onions (chopped)
- 1/2 cup of Sauerkraut
- 1/4 avocado
- 5-6 olives
Grate the carrots and beetroot or simply whiz into small pieces in a food processor. In a large bowl mix the carrots, beetroot and spring onion together. Top with avo, sauerkraut and olives. Serve and enjoy!
